【雲上嶺南】百年龙江的辣酱,顺德味道的另一面

顺德菜以“清、鲜、爽、嫩、滑”的特点深入人心,俘获众多天南地北的食客。然而翻阅历史典籍、穿过繁华街市,会发现顺德味道从来不止一面——辣,也是顺德人菜谱里不可缺少的一部分。

金秋时节,晒酱正当时。在顺德龙江,几乎家家户户都会吃辣,不仅自己酿制“乌酱”“甘竹辣椒酱”等辣味调料,还以这些辣酱为基调烹制出酸辣鲜爽的豉水鳊和浓郁咸香的酱鱼等菜式,鲜香又不失“狂野”的风味成为当地人念念不忘的乡愁。

Longjiang Hot Sauce: Another Shunde flavor!

Shunde cuisine is popular because of its characteristics of “clear, fresh, refreshing, tender and smooth”, and has captured many diners from all over the world. However, if you look through the history books and go through the prosperous streets, you will find that Shunde has never had more than one flavor–spicy, which is also an indispensable part of Shunde people’s recipes.

In autumn, it’s time to dry the sauce. In Longjiang, Shunde, almost every family can eat spicy food. People not only make their hot spices such as “Wujiang Sauce” and “Sweet Bamboo Chili Sauce”, but also cook tasty and spicy dishes with these seasonings. For the residents there, this delicious but “wild” flavor carries a strong unforgettable nostalgia.
